Kare Kare is a traditional Filipino stew complimented with a thick savory peanut sauce.
1/2 pound pork, cut into squares
6 pechay
3/4 teaspoon ground dark pepper
5 cups water
5 string beans
3 eggplants
1 small puso ng saging
1 sachet of mama sita kare2x mix powder
6 tbsp. peanut butter
4 tbsp. rice flour
1 knorr cubes
1.Boil pork in a large quantity of water, lower the heat and simmer until meat is very tender, adding water if needed, leaving about 1 ½ cups broth.
2. In a heavy saucepan, sauté garlic and onion in oil, add meat, stir fry and pour-in Mama Sita’s Kare-Kare Mix dissolved in a cup of water then add the remaining broth, peanut butter, knorr cubes and rice flour.
3. Stir and simmer until sauce thickens and add eggplant, puso ng saging and sitaw. Simmer for three minutes, stirring occasionally.
4. Add pechay and simmer for two minutes until vegetables are cooked.
Serve hot with bagoong and rice.
